RECIPE: Zuppa di Pesce

Zuppa di Pesce

Ingredients

Scale

1 lb of mixed seafood (clams, mussels, shrimp, calamari, scallops)

1 onion, finely chopped

2 garlic cloves, minced

1 can of plum tomatoes

1 cup of white wine

1 handful of fresh parsley, chopped

1 pinch of oregano

Extra virgin olive oil

Salt and pepper to taste

Instructions

  1. In a large pot, heat a generous drizzle of olive oil over medium heat. Add the chopped onion and garlic and sauté until softened, about 2-3 minutes.
  2. Add the plum tomatoes and white wine to the pot. Let it simmer for 5 minutes.
  3. Add the mixed seafood, stirring gently to combine with the sauce. Season with salt and pepper to taste.
  4. Cover the pot and let it cook for 10-15 minutes until the seafood is cooked through and the shells of the clams and mussels have opened.
  5. Once ready, remove from heat and add the chopped parsley and oregano. Drizzle with a little more olive oil and give it a final stir.
  6. Serve hot with crusty bread for dipping and enjoy this delicious zuppa di pesce, just like my granma used to make.
