DOP

Since 1985, the year of its establishment, the Pecorino Toscano Consortium has worked to protect and promote Tuscany’s main DOP cheese. Pecorino Toscano DOP has grown over the years thanks to the commitment of breeders, dairies and seasoners.

The Consortium took care above all of quality control and supervision of trade, with promotion and advertising actions, in Italy and abroad. The average annual production of Pecorino Toscano is 3,000 tons, for a total sales turnover of €55,000,000 of which €15,000,000 is exported. The name Pecorino Toscano is reserved only for the DOP product which must bear the mark of origin affixed to each wheel, in ink on the fresh product and in heat on the matured product.

DOP

The Consortium was founded in 1990 from the desire of its members to protect, regulate and protect the typical production of Tuscan Ham. The aim of each of them was to protect a tradition of their family and their territory, but at the same time to be recognized for the added value of being producers of territorial excellence resulting from centuries of tradition handed down from father to son. By obtaining the protected designation of origin in 1996, the members of the Consortium saw an increase in the value and prestige of their production, given that this certification represents the highest attestation of product quality. The Consortium deals with the promotion, protection and supervision of the Prosciutto Toscano DOP denomination throughout the national, European and international territory with constant and targeted activity to make it possible for all consumers to be able to taste a real slice of Tuscany every day.

Finocchiona IGP is a typical traditional sausage that can only be produced in Tuscany. Finocchiona IGP stands out for its unique taste and the flavour due to fennel seeds and flowers.

Finocchiona IGP has a long history that dates back to the Middle Ages: at the time, fennel seeds and flowers began to be used in the meat mixture instead of pepper, which was very expensive and rare at the time. The farmers, who could not afford to buy pepper, knew what nature offered for free: fennel plants grew spontaneously among the vines and olive trees of the countryside. The farmers thus began to flavour their meats with the seeds and dried flowers of fennel.

The Consortium works to protect, promote, enhance and defend Finocchiona: it is the Consortium’s task to spread the knowledge and consumption of Finocchiona in Italy and abroad.

IGP

The Consortium for the protection of Tuscan PGI Extra Virgin Olive Oil is the most important consortium structure of the regional agricultural economy and protects and guarantees the true Tuscan oil following the strict production regulations and according to internal and international standards. In summary: It was founded in 1997 and obtained the Protected Geographical Indication (PGI) recognition in 1998 for the Toscano denomination; It includes over 8,000 members, distributed across the entire regional territory; the corporate structure is representative of the entire supply chain of producers, mills and packers. The Consortium protects the use of the name and combats any illicit use of the name as well as promoting and enhancing the brand in Italy and abroad, through the creation of advertising campaigns and promotional, informative and educational initiatives.
