The Territory: History and Tradition

On the territory of origin of the DOP, nature and culture have found a perfect synthesis: a happy encounter between the Tuscan territory and tradition gave birth to these excellent products. From farming to production, everything must take place, as required by the DOP production regulations, in the area of origin. The caresses of the “breezes,” the perfect temperature and climate, the sea winds blowing on land protected by the Apennine Range, make this region the perfect area to mark the uniqueness of these excellent products.

Pecorino Toscano DOP

Pecorino Toscano DOP is a soft or semi-hard cheese made of sheep’s milk. It can be fresh or matured. The fresh kind is soft and delicate; the matured one is fragrant and intense, yet never piquant. Its unique characteristics depend on both the environment in which the sheep graze and the production methods. The Consortium for Protection of Pecorino Toscano DOP is founded in 1985, bringing together the skills and expertise of producers who love Tuscany and aim for excellence. It guarantees that only the cheese that follows the production regulation strict rules is called and sold as Pecorino Toscano DOP.

Prosciutto Toscano DOP

Prosciutto Toscano DOP is made exclusively from fresh pig legs in production facilities located in Tuscany. A delicate flavour, the crimson red of its dry and lean slices, and an intense taste are the distinctive characteristics of one of the icons of the Tuscan food and wine tradition. Aiming to guarantee a high-quality product, the Consortium – founded in 1990 by a group of Tuscan producers – ensures that every production stage of Prosciutto Toscano DOP is respected. It also protects and promotes the Designation of Origin in Italy and abroad.
