RECIPE: True Italian Crostini

RECIPE: True Italian Crostini

Ingredients

8 slices crusty Italian bread

2 tbsp. Extra Virgin Olive Oil DOP

150 g Toma Piemontese DOP

25 g Pancetta DOP – Cut into small dice

2 pcs. Cremini Mushrooms – Peeled and sliced into small wedges

Instructions

  • Place diced pancetta into a frying pan over low heat and cook very slowly, stirring often, until the pancetta is crispy.
  • Remove pancetta from the pan, leaving the fat, and turn the heat in the pan to high.
  • Allow the pan to get hot, then add the olive oil and the mushrooms.
  • Sauté quickly until the mushrooms get brown and crispy.
  • Remove mushrooms from the pan again leaving the oil in the pan.
  • Add the sliced bread and cook the bread in the oil until lightly brown and crispy.
  • Remove the bread from the pan and immediately spread the cheese on each piece allowing the heat of the bread to soften the cheese.
  • Top with the pancetta and mushrooms and drizzle with a bit of olive oil.
